The amuse-bouche is a small serving of a food served in-between or as a separate course. It is often not found on the printed menu, so it is a selection of the chef rather than an ordered item.
Because the amuse is served to many guests, a large number of these items must be prepared. On this evening, these potatoes sat ready to be put into action.
