Mise en Place
Mise en Place refers to the kitchen philosophy of having everything "put in place" to assure a successful shift in preparing the meals. The menu is reviewed and ingredients and equipment are placed within easy reach. The work flow is considered, and some chefs may go so far as to note that the process involves setting their state of mind for the evening.
