Summer Chopped Salad
July is a great time to be a fan of local farmers' markets, with an amazing assortment of colors, tastes and textures. A simple look at the variety of carrots can lead to appetizing meals. This one dish used local products including butterhead lettuce, cabbage, carrots, broccoli and green beans.
David Lebovitz's recent post for chopped vegetable salad is more of a game plan than an actual recipe, but that's intentional. Ingredients should include the best available local foods, supplemented as you wish with a few extra items of your choice. Visit the market and plan from there. As he suggests, I lightly steamed the broccoli and green beans before chopping.
He does include a very simple to prepare (five ingredient) lemon-garlic dressing that matches the fresh produce perfectly.
